I hope Betty doesn’t mind me hopping on here but I have had similar issues with mango peeling until I saw a demo. I now use this style of peeling and it is a breeze.
Cut the mango into 2 halves (avoiding the large centre pit). Using a drinking glass, push the lip of the glass in between the flesh and the skin. Then, just literally push the mango skin into the lip of the glass and slide the mango, firmly pressing the skin and mango against the glass lip. The skin peels off and the mango flesh falls into the glass. Once I have the lip of the glass between the flesh and skin, I use the heel of my hand and push down against the lip while slowly guiding the mango down (with the mango resting against your open hand). The mango skin is removed in one piece and, the flesh remains smooth and clean. Once peeled just lay the mango on the flat side down and, cut as you like. This method works all the time with ripe or overly ripe fruit.

We have a Pakistani lemonade we make w tiny lemons which almost taste like limes (I haven’t seen them in N America), sugar, salt, and pepper. 🩷I add maple syrup to it for my fam, and top it up w sparkling water x
